from raw cow’s milk and aged 16 months.
Fontina style cheese with flavors of earth, and caramel followed up with a brush
of salt and nuts. A semi-hard cheese with a natural thin rind (vegetarian rennet).
Reggie Jones (cheesemaker at CCC) creates
a blend of cow (60%) and goat (40%) milks
in a cheddar-style cheese with semi-firm, smooth texture. Seascape presents soft
tanginess and undertones of butter and caramel. Rind is vegetarian rennet.
